Recipe - Peaches N Cream
I love trying new recipes. Do you? I enjoy cooking! I got to thinking how with it being summer I had to start making sure we had some nice desserts with fresh fruit to help us makes sure we are getting a nice amount of fresh fruit before it goes out of season.
On a search I was looking for peach recipes. I found Peaches N Creme Pie here however I had a slight mishap with making it so listen to what mistake I made but it made something wonderful!!!
Here is what you will need:
48 Vanilla Wafers, finely crushed (about 1-1/2 cups)
1/3 cup
butter, melted
3/4 cup
boiling water
1 pkg.
(3 oz.) JELL-O Orange Flavor Gelatin
2 cups
ice cubes
1-1/2 cups
thawed cool whip whipped Topping
2 fresh peaches, peeled, chopped
Mix wafer crumbs and butter; press onto bottom and up side of 9-inch pie plate. DID THIS FINE!
ADD boiling water to gelatin mix in medium bowl;
stir 2 min. until completely dissolved. Add ice cubes; stir until
gelatin is slightly thickened. Remove any unmelted ice. Add cool whip;
stir until well blended. Gently stir in peaches. I DONE THIS PERFECTLY TOO! LOL
REFRIGERATE 15 min. or until gelatin mixture is thick enough to mound; WOW MISSED THIS COMPLETELY!!!!!!!!!! So here I have my mixture trying to pour it into the pie crust and I'm thinking as I'm pouring man this is going to be way to much, then about that time the mixture starts to top over my crust. Whats a woman to do? I hurried and grabbed the first thing I saw - A glass bowl! I hurried and turned the pie crust upside down in the bowl. Starred at it a second and thought yep that's alright! I just crushed a few more vanilla wafers to cover the top and placed in the fridge. Refrigerate 3 hours or until set.
I forgot to take a picture of the product before we all dug in, but this is what was left... LOL.
I know that the picture looks a little gross but please understand this was the left overs from my zoo eating. This was a great dessert and I will be certain to make it again. I will not use the pie plate idea next time either. This was easy and I was in love with the way it turned out. Easier to I think!
